Code: THH11002 Hospitality is an industry with a wide range of both casual and full time employment both in Australia and overseas. The Hospitality SAS is a two year course of study . The Certificate 1 in Hospitality (Operations) is a practical beverage making course in which students will prepare and serve espresso coffee and non-alcoholic beverages. It will require work placement in a hospitality establishment and participation in real catering events. The Certificate 1 in Hospitality (Operations) offered in year 11 is an entry level course for students wanting direct entry into the industry, particularly into the Front of House Operations such as waitering, bar attendant or barista. A Certificate I in Hospitality (Operations) will allow students to work at entry level, under direct supervision, in establishments undertaking a range of ‘front of house’ activities such as simple food and beverage service in café s, restaurants and hotels. The course is designed to provide students with a wide range of skills and knowledge applicable to both their personal and working lives. The course will provide students with competencies in the 5 Core Hospitality units plus 2 elective units and a wide variety of practical experiences. After completing this course, Yr 12 students would be ideally placed to extend the Certificate 1 into a Certificate II Hospitality (Operations) by completing 4 additional elective units e.g. the Bar course on a Wednesday afternoon through Brisbane North Institute of TAFE. A completed certificate ll is highly valued for gaining part-time or full time work in cafes, casual dining and beverage service establishments. After year 12, students would be eligible to pursue further study and gain additional qualifications in this industry. Students would also be well placed to work in a variety of positions in all areas of hospitality as the core units of the course are generic to all hospitality areas. Casual hospitality employment is a popular vocation for students in non-compulsory education such as university. Topics
AssessmentA variety of assessment will be used to provide evidence of success in each unit of competency. Assessment may include short oral or written tests, completion of workbooks, case studies, and demonstration of practical units of competencies. Students will be required to keep a diary/ portfolio of evidence whilst at work placement. Competency means being able to satisfactorily complete a task to industry standards. Competency in the units of work will be based on both ‘on the job’ (in the workplace) and ‘off the job’ (in the classroom) learning. All assessment will be recorded as Competent (J) or Not Yet Competent (M). It is mandatory that students participate in all practical tasks and work placement. Semester 1
